Popularity and Background of Cheddar

Despite what you may think, in the USA, cheddar cheese is the second most popular cheese in the country, falling just slightly behind Mozzarella. Nevertheless, Cheddar is one of the most popular and most famous cheeses in the world. Originally, in order to claim the name cheddar, the cheese had to be crafted within 30 miles of Wells Cathedral, Somerset in England where it was first discovered. Now, just about anyone can create this delicious cheese!

*Fun fact - During his time in office, between 1829 and 1837, U.S. President Andrew Jackson once held an open house party at the White House at which he served a 1,400lb block of cheddar cheese!

Aging is the only difference between mild and sharp Cheddars. The longer cheese is aged naturally, the sharper and more pronounced the Cheddar flavor becomes. This is due to the acidity of the cheese. Aged Cheddar is more acidic, which gives it its edge. Mild Cheddar cheese is generally aged for 2 to 3 months, whereas an extra sharp might be aged for as long as a year. Some of the sharpest Cheddar cheeses are aged between 16 months and two or more years. A mild Cheddar cheese melts consistently and easily, while sharper Cheddar cheese melts better if shredded first.
